Named for the Himalayan cedar and the spice box
The deodar cedar grows in the foothills of the Himalayas, and its wood has long fed kitchen fires across North India. We cook over that same kind of slow, fragrant heat.
The spice is the masala dabba, the round steel tin found in nearly every Indian kitchen. We grind and temper our spices fresh every day, so every dish tastes the way it does at home.
